I can’t believe how much time has gone by since I’ve had the time, energy or serious want to work on Culinary Zest. Well the desire was there, for sure, I just couldn’t seem to motivate myself to do something about it.
I think I hit the proverbial wall with the old food blog. A big SPLAT. And then I didn’t feel like doing much with it. I wanted to, but wanting and feeling are two separate beasts!
6 months is a long time to leave something sitting. Oddly enough, it doesn’t feel like it has been that long, but it has. Yikes.
I seem to have rediscovered my food mojo, which comes on the heels of some awesome upgrades I’ve been dying to make. A new awesome camera being one of the big ones. I’m excited to finally have something serious to work with, but at the same time…OhMahGah…so much to learn 😛
A couple new additions for a “demo” type cooking set up, some adventures in DIY lighting and I’m just about ready to throw myself at some more video experiments. I’ve debated that one for a while now. How to do it to make it work for me, my personality and without having to spend oodles of time editing. I’ve always thought short and sweet would be best and I’m excited to give that another go sometime soon!
But I digress…so what brings me back to my foodie site?
Cauliflower Buffalo Wings. These little nibbles have been a fav of mine this past Summer! 9 times out of 10, if there is cauliflower in my fridge, and there was a lot, it’s going to make Cauliflower Buffalo Wings! Yum. YUMMM!
I know I know, I’m a bit late on getting around to addressing this topic, but better late than never! And since I was looking for something to throw myself at that I could upload here, this was the winner. Can we have a woot! An awesome way to share something I’ve come to love this past Summer and to play with my new camera…win win!
I seriously love these things and though they’re softer than real chicken meat, they’re like freaking awesome, give you all that buffalo wing taste and have become one of my fav go to snacks.

The first time I made these I used all-purpose flour, after that I went to a gluten-free AP flour and found that the consistency was thicker using the gluten-free flour blend, which I liked. I just have to add a bit more water to get it to the stage I prefer before tossing in my cauliflower.
Since then I’ve gone on to play with the general recipe. I’ve used almond milk and coconut milk as my non-dairy ingredients, tossed in turmeric and Asian spice blends into the mix, I’ve yet to have a bad batch 🙂 I really like using the gluten-free all-purpose flour blend and have stuck with it ever since.
These are really super easy to make, whip up the dry mix, add your wet to the dry, mix, dip the cauliflower to coat, lay on a parchment lined cookie sheet and bake for 25 minutes at 450F, turning at the halfway point. Mix up your hot sauce and butter, dip the cooked cauliflower in sauce and put back on your cookie sheet to bake for another 25 minutes, turning again at the halfway point.
And what you end up with is…
Yummy on a plate! With a nice little side of dip to cool the heat…Ranch for me please, I never did care for blue cheese 😛
